This past Tuesday I attended a sourdough class run by Aviv at
Sidewalk Citizen Bakery. I learned a lot and I'm going to start my own "mother" this weekend after I buy some fancier flours. We learned about starter, ingredients, and of course made some bread and pizza. Aviv was a pretty good teacher, stressing that we should experiment and familarize ourselves with the process and "formula" instead of focusing on baking times and recipes. I left the class with enough dough to bake 3 loaves of bread and a freshly baked loaf. I love bread, but I also live by myself and as much as I would love to devour 4 loaves of bread in one week, it's not physically possible. So I baked up my dough balls to varying degrees of success and delivered them to some friends.

The loaf to the left was ready to bake when we left class, but it "rested" in my fridge for 24hrs anyways because I wasn't going to be baking any midnight bread. It also turned out the best because I baked it in a covered dutch oven, and kept it on the top rack of my oven.
The other two loaves were baked on the bottom rack, and unfortunately got burned bottoms. It's a lesson learned... I also baked the middle one in a covered corning ware casserole dish, which was wee bit too small for it, since it pushed up the cover. That's why it looks a little squished. The loaf on the left was baked on a pan, uncovered. I thought it might burn, but it didn't, although it's crust was much thicker than the other two loaves.
